POTATO CHEESE COMFORT CASSEROLE

3 1/2 lbs russet potatoes
2 heads garlic
1 onion, sliced n half, cut side down
2 cups heavy cream
2 eggs
Salt, pepper, nutmeg, to taste
1/4 lb shredded cheddar and provolone or mozzarella cheese
1/4 lb thin-sliced Italian salami, cut into 1 inch pieces
1/2 cup bread crumbs
1/2 to 1 cup grated parmesan cheese
Preheat oven to 350. Slice 1/3 of top of garlic heads, brush with olive oil and wrap loosely in foil. Butter and bread 2 quart casserole dish with 6 high sides. Pierce the potatoes with a fork and place on a baking sheet along with garlic and onion. Bake for 1 hour or until potatoes are soft.
Mash potatoes in a large bowl. Add squeezed out garlic and onion and mix until fairly smooth. Add cream, eggs, and seasonings.
Spoon about two-thirds of potatoes into prepared casserole dish, pressing mixture up sides. Layer salami and soft cheese, half the parmesan and half the breadcrumbs ton top of the potatoes. Season with salt and pepper. Top with remaining potato mixture. Sprinkle with rest of bread crumbs and parmesan cheese. Bake on a cookie sheet for 1 1/2 hours. Let rest for a few minutes before serving. Serves 8
