SPINACH SALAD WITH MEXICAN DRESSING

1 pkg fresh spinach, washed and torn into pieces
1/4 lb bacon, cooked and crumbled
4 hard boiled eggs

Mexican Dressing (Must be made and refrigerated 1 day in advance)
1/2 medium onion
1/3 cup sugar
1/4 tsp salt and pepper
1/2 tsp celery salt
1 1/2 tbsp prepared mustard
1/4 cup cider vinegar and salad oil

Place spinach pieces in a salad bowl and sprinkle with bacon. Dice 3 eggs and add to bowl. Add desired amount of dressing; tossing well. Slice remaining egg and place over salad. Serves 8

Dressing: Combine ingredients in a food processor.
