LAYERED TURTLE CHEESECAKE

1 1/4 cups graham cracker crumbs
1/4 cup melted butter
14 oz pkg caramels
1 (5 oz) can evaporated milk
1 cup chopped nuts, pecans or peanuts
2 (8 oz) pkg cream cheese, room temperature
1/2 cup sugar
2 eggs
1 tsp vanilla extract
3/4 cup semi-sweet chocolate, melted

Combine graham cracker crumbs and butter. Press into bottom and 1 inch up sides of a 9 inch springform pan. Bake at 350 for 6-8 minutes. Cool.

Filling: Combine caramels and milk in a heavy saucepan. Cook over low heat until melted, stirring often. Pour over crust. Sprinkle nuts on to; set aside

Beat cream cheese until light and fluffy. Gradually add sugar, mixing well. Add eggs, one at a time, beating after each addition. Stir in vanilla extract and melted chocolate, beat until blended. Pour over nut layer. Bake for 30 minutes. Remove from oven and run knife around edge of pan to release sides. Let cool to room temperature. Cover and chill at least 8 hours before serving.
