IMPOSSIBLE GREEK SPINACH PIE

1/2 cup chopped green onions
1 tbsp butter
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1 cup cottage cheese
1 cup milk
1/2 cup baking mix
3 eggs
1 tbsp lemon juice
1/4 tsp pepper
3 tbsp grated parmesan cheese
1/4 tsp nutmeg

Saute onions in butter; add spinach. In a greased deep dish pie pan, layer spinach mixture and cottage. Put remaining ingredients in a blender and mix well. Pour into pie pan. Bake at 350 for 45 minutes or until knife comes out clean.
