*ANGRY CHICKEN PASTA*

Category: Pasta - Chicken

4 boneless, skinless chicken breasts, seasoned with salt and pepper and cut into strips
6 oz portabella mushrooms, chopped
1 onion, chopped
1 1/2 to 3 tbsp crushed garlic
1/4 cup white wine
3 cups whipping cream
3/4 cup grated parmesan and Romano cheese
1/8 to 1/4 cup Cajun seasoning
1 lb favorite pasta, cooked al dente, drained
Grated parmesan cheese

While pasta is cooking, saute chicken, mushrooms and onions; set aside. Meanwhile, prepare sauce by combining garlic and wine in a saucepan. Cook over medium-low heat about 5 minutes to reduce by half. Add cream, increase heat and simmer to a low boil. Reduce heat to simmer, blend in cheese and seasoning. Simmer 10-15 minutes, stirring occasionally. Remove from heat and keep warm until ready to use.

Add meat and pasta to sauce, and simmer until sauce thickens slightly, about 5 minutes, stirring occasionally. Remove from heat; garnish with additional with additional cheese. Serves 4
