SQUASH AND BACON CASSEROLE

4 strips bacon, cooked until crisp, drained and crumbled
5 medium squash or 1 (32 oz) pkg sliced frozen squash
1 medium onion, chopped
1 tbsp butter
2 eggs, beaten
Salt and pepper, to taste
1/2 cup grated cheddar cheese

Boil squash until tender. In bacon grease, brown onion. Add butter, squash, eggs, salt and pepper. Cook, stirring until eggs are cooked. In a 2-quart casserole dish, layer of squash mixture, bacon and cheese. Bake at 350 until hot and cheese has melted. Serves 4-6.
