RASPBERRY MUFFINS

Category: Muffins

2 eggs
1 1/2 cups sugar
1/2 cup butter, melted
1 tsp baking soda and cinnamon
1/2 tsp allspice and cloves
Pinch of salt
2 cups flour
1/3 cup milk
2 cups raspberries

Topping
2 cups brown sugar
1/2 cup sugar
1 cup flour
1 tsp cinnamon and allspice
2 tsp melted butter
2 cups chopped nuts
1 tsp freshly grated lemon or orange peel

Muffins: Beat the first 3 ingredients until light. Add the dry ingredients and milk. Mix together until just blended. Fold in raspberries carefully so as to not break up the berries. Fill oiled muffin pants to the top with only 1 tsp topping. Bake at 375 for 20 minutes or until muffins are cooked through in the middle.

Topping: Mix together all ingredients. Do not add any more topping to the muffins because it will sink the muffin.
