CAJUN CHICKEN SALAD

Dressing
1/4 cup Dijon mustard
3 tbsp olive oil
2 tbsp dry white wine
2 tbsp honey
Salt and pepper
Salad
1 small heat Boston lettuce, torn into bite-sized pieces
3 medium plum tomatoes, sliced thin
1 small onion, sliced thin
2 tsp cayenne pepper
1 1/2 tsp paprika
1 tsp pepper
1/2 tsp chili powder, garlic powder and salt
2 large boneless, skinless chicken breasts

Dressing: Whisk together ingredients. Season with salt and pepper. Can be prepared 2 hours ahead. Let stand at room temperature.

Salad. Toss vegetables in a bowl. Divide salad between 2 plates. Combine seasonings and spices. Thoroughly coat chicken with mixture. Heat 1 tbsp oil in a skillet and brown meat, about 4 minutes per side. Transfer to a plate. Cut cross-wise into thin strips. Arrange on top of salad. Spoon dressing over and serve.
