CHICKEN FAJITAS

1/4 cup olive oil
2 tbsp red wine vinegar
2 tbsp lemon juice
2 garlic cloves, minced
4 boneless, skinless chicken breasts, cut into strips
8 (8 inch) flour tortillas
1 (1.4 oz) pkg chicken fajita seasoning
1 bell pepper, cut into thin strips
1 purple onion, thinly sliced and separated into rings
Optional toppings: chopped tomato, shredded cheese and lettuce, sour cream and sliced green onions
Combine first 4 ingredients in a plastic bag. Add chicken and marinate in refrigerator at least 30 minutes. Drain. Wrap shells in foil and bake at 350 for 15 minutes. Saute chicken and add seasoning mix, pepper and onion; saute until chicken is done. Spoon mixture evenly in tortillas and roll up. Serve with desired toppings. Serves 4
