CAJUN CHICKEN SANDWICHES

1/4 cup dry sherry or apple juice
1 tsp Worcestershire sauce
1/4 tsp cayenne and black pepper
1/8 – 1/4 tsp pepper sauce
4 boneless, skinless chicken breasts
4 slices French bread, 1 inch thick
4 slices tomato, red bell pepper and Swiss cheese
1/4 cup parmesan salad dressing
Combine first 5 ingredients in a resealable bag. Add chicken and turn to coat. Refrigerate at least 1 hour but no long 24 hours. Brush grill rack with vegetable oil. Heat coals.
Remove chicken from marinade; reserve marinade. Grill chicken, uncovered, 4-6 inch from medium heat for 15-20 minutes, brushing frequently with marinade and turning once, until juice is no longer pink when centers of thickest parts are cut. Add cheese on top of the chicken and melt. Discard any remaining marinade.
Toast bread slices with garlic butter, and top with chicken, tomato and bell pepper. Serves 4
