3 cups flour
2 cups sugar
12 tsp soda and cinnamon
1 (10 oz) can coconut, optional
1 cup chopped nuts, any type – pecans, walnuts or macadamia
2 tsp vanilla
3 eggs beaten
1 1/4 cups oil
2 cups mashed bananas
1 (8 oz) can crushed pineapple, well drained

Combine dry ingredients, stir in nuts and set aside. Combine remaining ingredients in another bowl and pour into dry ingredients. Stir until just moistened. Pour into 2 greased loaf pans. Bake at 350 for approximately 1 hour and 30 minutes. Cool 10 minutes before removing from pan and let cool completely.
