CHEESY SHRIMP AND RICE CASSEROLE

1 onion, chopped
1 tsp minced garlic
1/2 cup chopped red or green bell pepper
1 1/2 lbs medium shrimp, peeled
12 oz sliced mushrooms
1 1/2 cups shredded cheddar cheese
1/3 cup salsa
1 tbsp Worcestershire sauce
1/2 cup evaporated skimmed milk
1 bunch green onions, sliced
2 tbsp canned diced green chilies, drained
2 cups cooked rice

In a large skillet sprayed with cooking spray, saute the first 5 ingredients over medium-high heat for 5-7 minutes. Add next 6 ingredients. Stir in the rice and cook until the cheese is melted and well combined, about 10 minutes. Serves 4-6
