ROSEMARY AND SPICE NUTS

2 1/2 cups mixed nuts
2 tbsp olive oil
1 1/2 tbsp chopped fresh rosemary
1 tbsp sugar
1 1/2 tsp ground cumin
1 tsp salt and pepper
1/4 tsp cayenne pepper
Preheat oven to 350. Place the nuts in a bowl. Pour oil in a small saucepan and place over medium heat until warm. Add the rosemary and stir until mixture is aromatic, about 1 minute. Pour flavored oil over nuts. Add the spices and stir to coat evenly. Transfer the nuts to a baking pan. Bake, stirring occasionally, until the nuts are toasted, about 20 minutes. Remove from oven and let cool completely. Stir in an airtight container up to 4 days.
