1 cup Monterrey jack or Asadero cheese, shredded
4 oz jalapenos, chopped
1/4 cup half-and-half, more if needed
2 tbsp onion, finely chopped
2 tsp ground cumin
1/2 tsp salt

Heat all ingredients over low heat, stirring occasionally, until the cheese is melted. Add additional half-and-half in mixture is to thick.
