FIESTA SAUSAGE DIP

1 (16 oz) pkg hot sausage
1 large sweet onion, chopped
2 (8 oz) pkg cream cheese, softened
2 medium firm-ripe tomatoes, seeded and chopped
5 pickled yellow banana peppers, seeded and diced small
3 pickled jalapeno peppers, seeded and finely chopped
1/2 cup finely chopped sweet red pepper
1/3 cup chopped fresh cilantro leaves

Crumble sausage into a Dutch oven; cook with onion until lightly browned; drain well. Rinse and wipe pot clean.

In same pot, combine drained sausage mixture, cream cheese, tomatoes and peppers. Cook over medium heat, stirring frequently, until heated through.

Fold in sweet red pepper and cilantro. Serve warm in chafing dish with corn chips. Garnish with additional cilantro and diced tomato.
