BUTTERSCOTCH CHIP OAT COOKIES

1/2 cup butter
1/2 cup sugar and packed brown sugar
1 large egg
1 tsp vanilla extract
1 tbsp cold water
1 cup -purpose flour
1 cup quick oats
1/2 tsp baking soda, baking powder and salt
1 cup butterscotch chips
Preheat the oven to 350. Cream the butter and sugars together. Add the egg and beat until light and fluffy. Add the vanilla and water.
In another bowl, stir the flour, oats, baking soda, baking powder, and salt together. Add the flour mixture to the creamed mixture and beat until well combined. Add the butterscotch chips.
Spoon the dough in walnut-sized mounds onto ungreased cookie sheets. Bake for 9 minutes or until the cookies are light brown. Let them sit for a minute or two on the pan and then remove them to a wire rack to cool.
