BROWN-EYED SUSANS

3/4 cup butter
1/2 cup sugar
1 egg
1 tsp vanilla
1 2/3 cup flour
1/4 tsp salt
Filling
1 cup confectioners sugar
3 tbsp unsweetened cocoa
2 tbsp butter
1/2 tsp vanilla
1 1/2 tsp milk
Almonds, garnish
Cream together first 4 ingredients until fluffy. Add flour and salt; blend well. Drop dough by tspfuls into an ungreased cookie sheet. For more uniform cookies, dough can be chilled, then hand-rolled into balls. Make an indentation in the center of each cookie with thumb. Bake at 375 for 8-10 minutes or until firm and lightly browned.
Meanwhile, combine all filling ingredients and blend until smooth and creamy. Before remove cookies from pan, fill with a tspful of filling. Swirl with a spatula; top with almond. Remove from cookie sheet and cool on a wire rack.
