GINGER VEGETABLE STIR FRY

2 tsp cornstarch
1/2 cup orange juice
1/4 cup soy sauce
2 medium carrots, julienned
2 cups fresh broccoli florets
2 cups fresh green beans (2-inch pieces)
1/4 cup vegetable oil
2 cups sweet potato, julienned
2 cups thinly sliced red onion
2 garlic clove, minced
1/2 tsp ground ginger or 1 tsp fresh ginger
1/4 tsp crushed red pepper flakes
In a small bowl, combine cornstarch, orange juice and soy sauce until smooth; set aside. In a large skillet or wok, stir-fry carrot, broccoli and beans in oil for 8 minutes. Add sweet potato and onion; stir-fry until vegetables are crisp-tender.
Stir the soy sauce mixture; add to the skillet with garlic, ginger, and pepper flakes. Bring to a boil; cook and stir for 1 minute or until thickened.
