FETTUCINI WITH PROSCIUTTO

1 lb fettucini, cooked al dente, drained
1 pint whipping cream or half-and-half
1/4 lb lean prosciutto or baked ham, cut into thin slices
1 small onion, chopped
1/2 lb sliced mushrooms
1 cup frozen peas
2 oz butter
1/4 tsp sage, crushed
Dash red pepper
1/3 cup Marsala wine
1/2 cup grated parmesan cheese

While pasta is cooking, Melt butter in a large pan and saute prosciutto and vegetable about 5 minutes. Add spices and wine; mix thoroughly, allowing liquid to evaporate just a little. Reduce heat and allow to simmer. Add cream and stir constantly and bring sauce to a boil so mixture thickens.

Drain pasta but do not rinse. Add to sauce, along with cheese and toss together until sauce and cheese coats pasta. Turn onto a serving platter and serve. Serves 4-6
