ROASTED DILL CHICKEN

1/2 cup Italian salad dressing
2 tbsp dried dill weed
1/2 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
1 roasting chicken
2 lbs potatoes, cut into chunks

Preheat oven to 375. Blend together first 5 ingredients in a food processor until completely blended. Spread mixture inside cavity, then under and over skin of chicken. Arrange potatoes around chicken in a roasting pan. Roast for 1 1/2 hours or until meat thermometer reaches 185 and potatoes are done.
