BAKED GARLIC POTATOES

1 lb small potatoes
10 cloves garlic
1/4 cup olive oil
1 tsp fresh rosemary, finely chopped
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
Butter, melted

Toss together and arrange in a baking dish in a single layer. Bake, covered, at 450 for 25 minutes. Turn potatoes, then bake another 25 minutes or until potatoes and cloves are soft. Cut potatoes open, spread with mashed cloves and butter. Serves 4
