BACON BLUE CHEESE TWICE BAKED POTATOES

4 medium baking potatoes, washed
Vegetable oil
4 slices bacon, cooked and crumbled
1/2 cup sour cream
1/4 cup milk and butter
1/2 cup blue cheese, crumbled
3/4 tsp salt
1/8 tsp white pepper

Rub potato skins with oil and bake at 400 for 1 hour or until done. Allow to cool to touch. Slice skin away from top of each potato. Carefully scoop out pulp, leaving shells in tact. Combine pulp with remaining ingredients except bacon in a medium mixing bowl. Beat until light and fluffy. Stuff shells with potato mixture. Bake at 400 for 15 minutes and top with bacon. Serves 4
