CHICKEN SAUTE

Meaty parts of 2 medium frying chickens
4 clove garlic, minced
1 pint fresh mushrooms, thinly sliced
6 tbsp olive oil
3/4 cup dry white wine
Salt and pepper, to taste

Heat oil in a skillet and add garlic. Cook until browned. Remove and discard garlic. Quickly brown chicken in oil; removing pieces if necessary to get all pieces browned.

When chicken is browned, pour off excess oil. Return chicken to skillet. Reduce heat; add mushrooms and wine. Cover and cook for 20 minutes or until wine is absorbed and chicken is done.
