CHICKEN WITH ARTICHOKES AND WINE SAUCE

Category: Chicken

1 chicken, cut into serving pieces
3/4 cup chicken broth and sherry or white wine
1 pkg frozen artichoke hearts
3 tomatoes, peeled and quartered
1 onion, sliced thin
1/4 lb mushrooms, trimmed, whole

Season chicken with salt and pepper. Roll in flour and brown in butter. Add brown and wine. Cook 45 minutes. Add remaining ingredients to heat through. Serves 4

NOTE: Good served with rice. I like to thicken sauce with cornstarch slurry.
