PUMPKIN SPICE LAYER CAKE

1 yellow cake mix
3 large eggs
1 cup water
1 cup canned pumpkin puree
1 to 1 1/2 tsp cinnamon
1/4 tsp ground ginger and ground nutmeg

Preheat oven to 350. Generously grease then flour two 9-inch round cake pans.

In a large mixing bowl all ingredients; beat on low speed for 30 seconds, then on high speed for 2 minutes stopping and scraping down the sides of the bowl a few times during mixing. Divide batter evenly between the two pans. Bake for 25-30 minutes or until the cake test done. Cool for 10 minutes before removing to wire racks. Frost with favorite cream cheese frosting.
