LAYERED GRECIAN BAKE

1 1/2 lbs ground beef
1/2 cup chopped onion
1/2 cup dry breadcrumbs
1 egg, slightly beaten
1 1/4 tsp salt
1 tsp dried whole basil
1/4 tsp pepper
2 (8 oz) cans tomato sauce
1 small eggplant, peeled, cut into 1/2 inch slices
1 cup shredded sharp cheddar cheese
1/2 cup sour cream

Preheat oven to 350. Combine first 7 ingredients; stir in 1 can tomato sauce. Divide mixture in half; spread 1/2 in a 9 inch square baking pan. Place eggplant slices on top of meat mixture. Combine cheese and sour cream; spread over eggplant. Top with remaining meat mixture; spreading evenly. Bake for 1 hour; drain and discard excess drippings. Pour remaining can of tomato sauce over meat. Bake 15 minutes longer. Serves 6
