CHICKEN WITH SPICY MARMALADE GLAZE

1/2 cup orange marmalade
2 chopped scallions
1 tbsp Dijon mustard
2 tsp fresh lemon juice
1/4 tsp crushed red pepper
4 skinless boneless chicken breasts seasoned with salt

Spray the rack of a broiler pan with nonstick spray. Preheat the broiler.

In a small bowl, whisk together marmalade, scallions, mustard, lemon juice and crushed red pepper. Sprinkle chicken breasts with salt. Place chicken on the broiler rack and brush with half of the marmalade mixture. Broil 3 inches from the heat, brushing periodically with the remaining glaze until lightly browned, about 4 minutes on each side. Serves 4
