RICE AND BEANS CASSEROLE - Easy

Category: Rice/Risotto

1 tbsp olive oil
4 stalks celery, chopped
1 medium onion, chopped
1 (7 to 8 oz) pkg seasoned black beans and rice mix
1 (19 oz) can ready-to-serve black bean soup
3 medium tomatoes, coarsely chopped
1 cup diced ham
1/4 cup chopped cilantro
2 tbsp lime juice
Cilantro sprigs, garnish

In a skillet, heat oil until hot. Add vegetables and cook, covered, 7-8 minutes or until tender and lightly browned, stirring occasionally. Add rice and bean mix, soup, 1 cup chopped tomatoes and 2 cups water. Heat to boiling. Reduce heat to low; cover and simmer 20-25 minutes or until rice is tender. Stir in remaining ingredients. To serve, ladle into bowl and top with remaining chopped tomatoes; garnish with cilantro.
