WINE SIMMERED BEEF AND VEGETABLES

1 1/2 to 2 lbs round steak
6 tbsp flour, divided
1/2 tsp salt
1/4 tsp pepper
3 tbsp oil
1 medium onion, thinly sliced and separated into rings
1 medium green bell pepper, seeded and sliced into rings
2/3 cup julienne carrot strips
1/2 tsp dried basil and marjoram
2/3 cup wine and cold water
1/2 tsp instant beef bouillon granules
Trim bone and fat from beef. Pound beef with meat mallet and cut into serving-size pieces. Set aside.
Mix together 4 tbsp flour, salt and pepper in a dish and add beef to coat on both sides with mixture. Brown and layer with sliced vegetables. Sprinkle with seasonings. Add wine and heat to boiling. Cover, reduce heat, and simmer about 1 hour, or until beef is tender. Transfer to serving platter, reserving drippings in skillet.
Place cold water in 1 cup measure and blend in remaining flour. Stir mixture and pour into drippings in skillet. Stir in bouillon granules. Cover over medium-high heat, stirring constantly, until thickened and bubbly. Serve with meat and vegetables. Serves 4-6
