CHICKEN FETTUCCINE

1/2 cup butter, divided
1 (8 oz) pkg mushrooms, sliced
1 small red bell pepper, cut into thin strips
1 small onion, chopped
1 clove garlic, minced
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry, optional
2 cups chopped roasted chicken
1/2 cup whipping cream or half-and-half
1/2 cup grated parmesan cheese
2 tbsp fresh chopped parsley
1/4 tsp ground white pepper

8 oz fettuccine, cooked al dente, drained

Melt 2 tbsp butter in a large skillet and add next 3 ingredients. Saute until tender. Add spinach and chicken, cook until thoroughly heated. Remove form skillet. Combine remaining 2 tbsp butter and whipping cream in skillet. Cook over low heat until butter melts. Stir in remaining ingredients and pour over noodles; tossing to combine mixture.
