SPAGOS SPICY CHICKEN PIZZA

1 bread shell
1 lb skinned and boned chicken breasts, cubed

Marinade:
1/2 cup plus 1 tbsp olive oil
3 1/2 tsp lime juice
2 tsp chopped jalapeno pepper
Pinch chopped cilantro
Salt

Topping:
3 cups grated mozzarella cheese
2 cups grated Fontina cheese
1 lb plum tomatoes, ends removed, sliced thin
1/2 cup cubed eggplant, sauteed or grilled
1/2 cup grilled onion, chopped
Chopped chives
4 tsp grated parmesan cheese

Arrange cubed chicken in a bowl and toss with marinade ingredients. Using 1/2 cup oil, season lightly with salt. Let marinate about 1 hour, refrigerated. In a skillet large enough to hold chicken in one layer, heat remaining oil. Saute chicken just to brown on all sides. Preheat oven to 525. Prepare pizza with the toppings and cooked chicken. Bake until cheese has melted or and bottom lightly browned.
