BLUEBERRY BUCKLE

Category: Cobblers/Crumbles and Crisps

1/2 cup unsalted butter, softened
3/4 cup sugar
1 egg
2 cups flour
2 1/2 tsp baking powder
1/2 tsp grounded nutmeg
1/4 tsp salt
1/2 cup milk
2 cups fresh blueberries

In a large bowl, cream butter and sugar until fluffy and light. Beat in the egg. Sift together dry ingredients and add to the butter mixture alternating with the milk. Stir until well blended. Pour the batter into a buttered and floured 9 inch square baking pan. Top with blueberries. Cover the batter evenly with the berries and press them in slightly.

Topping
1/2 cup flour and packed brown sugar
1/2 tsp cinnamon
1/2 cup unsalted butter, cut into small pieces

Combine topping ingredients until crumbly and sprinkle evenly over the berries. Bake at 350 for 45-50 minutes. Top should be golden and bubbly. Serve warm with ice cream.
