MASHED YAMS WITH CITRUS AND GINGER

6 large yams
Zest of 2 oranges
1 cup orange juice
1 (2”) piece ginger root
Salt and pepper

Bake yams in oven at 400 about 1 hour or until cooked through. Peel and transfer to a large bowl. Mash and add the zest and juice to flavor and light the mixture. Peel the ginger root and chop fine.

Working over the bowl of yams, press a small amount of ginger through a garlic press, allowing the liquid to fall onto the bowl. You should get about 2 tsp ginger juice. Stir mixture with salt and pepper. Serve warm. Serves 10 (1/2 cup) servings
