HERB ROASTED SWEET POTATO SKINS
Category: Sweet Potatoes
2 lb small sweet potatoes
1/4 cup grated Parmesan cheese
3 tbsp chopped parsley
2 cloves garlic, minced
1/2 tsp dried oregano, crumbled rosemary and salt
1/4 tsp pepper
Preheat oven to 400.  Prick sweet potatoes and bake 35-45 minutes, until tender but not mushy.  Set on a rack to cool.  Combine remaining ingredients in a large bowl.  
When potatoes are cool enough to handle, preheat broiler.  Half potatoes lengthwise.  Scoop out flesh, leaving a 1/4 inch thick wall.  Toss skins in the Parmesan mixture.  Place on a baking sheet and broil 4-5” from heat for 4-5 minutes, or until cheese is melted.  Serves 4
