GLAZED SWEET POTATOES, APPLES AND PECANS

6 medium sweet potatoes, peeled and cut 3/4 inch thick slices
Nonstick cooking spray
1 tsp salt
2 medium apples, peeled, cored sliced 1/4 inch thick
4 tbsp butter
1/4 tsp ground nutmeg
1/2 cup maple syrup, apple cider and chopped nuts

Preheat oven to 400. Coat a 13x9 inch baking dish with cooking spray; set aside.

In a large saucepan, bring 3 quarts of water to a boil and add sweet potatoes and salt. Boil for 6-7 minutes, or until just tender. Remove from heat and transfer to prepared dish with a slotted spoon. Add apple slices and stir to combine.

In a small saucepan, combine butter and remaining ingredients, except nuts. Stir and bring to a just to a boil; remove from heat. Pour over potato mixture. Sprinkle with pecans. Bake for 25-30 minutes or until glaze thickens, potatoes and apples are tend and pecans have turned light brown. Serves 12
