GLAZED CAJUN SWEET POTATOES

6 medium sweet potatoes, peeled and quartered
1 cup packed brown sugar
1/4 cup unsweetened pineapple juice
2 tbsp lemon juice
1 tsp Cajun seasoning
1/2 tsp cinnamon and nutmeg
1/2 cup toasted chopped pecans
2 cups miniature marshmallows

Boil potatoes until tender. Cool and sliced. Combine next 6 ingredients in a small bowl. Layer sliced potatoes in a large buttered baking dish. Pour glaze over potatoes and sprinkle with pecans. Top with miniature marshmallows. Bake at 350 for 40 minutes. Top with marshmallows and return to oven until topping has melted and browned. Serves 6
