CINNAMON BATTER-DIPPED FRENCH TOAST

Vegetable oil
2 cups baking mix
1 1/4 cups milk
2 tsp cinnamon
1 tsp vanilla
2 eggs
10 slices firm bread

Heat oil in skillet over medium-high heat until hot. Beat remaining ingredient except bread with wire whisk until only small lumps remain. Dip bread into batter; drain excess batter back into bowl. Cook until golden brown, 1-2 minutes on each side. Drain. Serve warm with syrup or powdered sugar.
