Filling
1/4 cup each raisins and rum
3/4 cup water
12 oz ricotta cheese, drained
4 oz mozzarella cheese, grated
Batter
2 eggs, beaten
2 cups half-and-half
3 tbsp Grand Marnier
Sprinkle of nutmeg
2 loaves Italian or 1 loaf French bread
Add raisin to rum and water; soak in refrigerator overnight. Drain raisins and mix with cheeses.
To assemble, slice bread in 1 inch diagonal slices. Slit each slice lengthwise through center of crust almost all the way through dough to form a packet. Using your hands, press as mush of the fill into each pocket as you can. Clean off excess on the outside. Mix batter ingredients together.
Dip each slice into batter and coat evenly on both sides. Fry on lightly oiled skillet, brown on each side.
