CARAMELIZED APPLE FRENCH TOAST

1 cup brown sugar
3 tbsp light corn syrup
1/2 cup chopped pecans, optional
6 tbsp butter
3 Granny Smith Apples, peeled, cored and sliced
18 slices day old white bread
6 eggs
2 cup half-and-half or milk
1/2 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
Combine sugar, syrup and butter; boil in pan for 1 minute. Pour into greased 9 x 13 pan. Sprinkle with nuts and then the sliced apples. Place bread 3 layers deep in pan. Mix eggs, half-and-half and vanilla together. Pour over bread. Refrigerate overnight. Sprinkle with cinnamon and nutmeg. Bake at 350 for 45 minutes until brown and slightly puffy.
