PARMESAN CRUSTED CATFISH

1/2 cup grated parmesan cheese
2 tbsp yellow cornmeal
1 tsp paprika
1/8 tsp ground red pepper
8 catfish fillets

Combine first 4 ingredients and dredge catfish in mixture, shaking off excess. Spray cooking dish and broil 3 inches from heat, about 10 minutes. Serves 8
