ROASTED CITRUS TURKEY BREAST

1 (4-5 lb) bone-in turkey breast, thawed
Pinch of fresh parsley, thyme and rosemary, finely chopped
Pinch black pepper and paprika
2 oranges, zested and juiced
1 lemon, zested and juiced
Rinse and pat dry turkey breast with paper towels. In a medium bowl, combine herbs and both zests. Rub the mixture over the skin of the turkey. Place on a roasting rack in a pan. Drizzle the citrus juices over the turkey and sprinkle with the pepper and paprika. Roast the turkey, uncovered, at 325 for 2 1/2 hour or until a meat thermometer registers 170 to 175 degrees, basting the turkey often with the pan juices. Allow to rest before slicing. If desired, remove the skin.
