BAKED CHICKEN WINGS WITH SWEET AND SOUR SAUCE

Sauce
1 cup apricot preserves
2 tbsp brown sugar
1 tsp dry mustard
1/2 tsp ground ginger
1/4 cup cider vinegar

Wings
Nonstick Cooking Spray
3 lbs chicken wings*
1/3 cup grainy mustard (I use Grey Poupon, Country Dijon)
3 tbsp oil
1 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper

Preheat oven to 450. Line a baking sheet with foil; spray with nonstick cooking spray, set aside. Combine all sauce ingredients in a small saucepan. Heat over medium heat until sugar is melted, set aside. Disjoint chicken wings, discard tips. Rinse and pat dry with a paper towel.

In a large bowl, combine grainy mustard, oil, salt, pepper and cayenne pepper; add chicken wings and toss to coat. Place coated chicken wings on prepared sheet. Spray each wing thoroughly with nonstick cooking spray. Bake 25 to 30 minutes until done, turning once. Remove from oven, raise oven rack and turn oven to broil.

Brush chicken wings with sweet and sour sauce; return to oven and broil about 2 minutes or until golden brown. Serve with remaining sweet and sour sauce for dipping. Note: * This is really good using boneless chicken breasts.
