BUFFALO CHICKEN SALAD I

6 chicken tenders
Oil
1 cup flour, seasoned with salt and pepper
2 oz cooked bacon, crumbled
Salt and pepper, to taste
1/4 cup crumbled blue cheese
1 egg
1/2 cup milk
1 cup hot sauce
1/2 cup unsalted butter
1 1/2 tsp Cajun seasoning
1/2 cup diced tomato
1/2 red onion, cut into slices
6 cups salad mix
Preheat oil to 325.  Place seasoned flour in a small bowl.  In another bowl, combine egg and milk.  Place chicken tenders into egg wash and then roll in seasoned flour.  Place chicken into oil; fry until golden bowl, approximately 3 minutes.  
In a saucepan, place hot sauce, butter and Cajun seasoning.  Allow butter to melt completely then removed from heat.  Place salad mix into a serving bowl.  Top with diced tomato, bacon and blue cheese.  Place chicken tenders into a mixing bowl with 1/4 cup of hot sauce mixture; toss.  Cut chicken into 1 inch pieces and place on top of salad.  Garnish with onion rings and blue cheese dressing.
