MAPLE CARAMEL BREAD PUDDING

8 slices cinnamon raisin bread
2 whole eggs
1 egg white
1/3 cup sugar
1-1/2 cups reduced-fat (2%) milk
1/2 cup maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
6 tbsp caramel ice cream topping
Preheat oven to 350. Spray 8X8-inch baking dish with nonstick cooking spray. Cut bread into 3/4-inch cubes; arrange in prepared dish.
Beat whole eggs, egg white and sugar in medium bowl. Beat in milk, syrup, cinnamon, nutmeg and salt; pour evenly over bread. Toss bread gently to coat. Bake 45 minutes or until center is set. Transfer to wire cooling rack; let stand 20 minutes before serving. Serve warm with caramel topping.
