MARINATED SHRIMP

Category: Cold

2 lbs medium-size shrimp, peeled with tail intact and deveined
6 cups salted water
1/2 cup sugar
1 1/2 cups white vinegar
1 cup vegetable oil
1/4 cup capers, undrained
1/2 to 1 tsp salt
1 1/2 tsp celery salt
1 medium white or red onion, sliced and separated into rings

Bring water to a boil and add shrimp. Cook for 3 minutes or just until shrimp turn pink. Drain and rinse with cold water. Chill.

Combine sugar and next 5 ingredients in a shallow dish; add shrimp alternately with onion. Cover and chill at least 6 hours, turning occasionally. Drain shrimp and discard marinade before serving.
