GROUND BEEF AND EGGPLANT CASSEROLE

1 lb ground beef
1 cup chopped onion
1 1/2 cups coarsely chopped and peeled eggplant
1 cup coarsely chopped and peeled potato
1/2 cup tomato sauce
1 tsp chili powder
3/4 tsp ground nutmeg
1/2 tsp salt and garlic powder
1/4 tsp pepper
1/4 cup grated parmesan cheese
2 eggs
1 cup plain yogurt

Preheat oven to 350. Brown beef and onion in a skillet; drain. Stir in next 3 ingredients and seasonings. Simmer, covered, for 20 minutes or until potatoes and eggplant are tender. Stir in cheese. Spoon into a 1 1/2 quart casserole. Beat eggs yogurt; spoon on top of eggplant mixture. Bake, uncovered, for 30-35 minutes or until top is set. Serves 6
