1 large ripe tomatoes, peeled, seeded and chopped
1/4 cup balsamic vinegar
1 tbsp minced shallot
1/4 cup olive oil
1 tsp minced garlic
Salt and pepper, to taste
1/2 cup tomato juice

Place chopped tomatoes in a skillet and cook over low heat until liquid is evaporated. Remove from skillet and allow to cool. Combine with remaining ingredients and mix well. Let stand, loosely covered, at least 2 hours before serving. Serve with favorite salad. Makes 1 cup
