ISLAND CHICKEN WINGS

Category: Wings

1 clove garlic, minced
1 tbsp olive oil
1 bag frozen chicken drummettes, thawed
1 (4 oz) can diced green chilies, drained
1/4 cup chopped onion and golden raisins
2 tbsp apricot preserves
1 tbsp brown sugar and lemon juice
1/4 tsp ground allspice

Rinse and pat dry chicken wings and season with salt and pepper. Brown chicken wings in oil with garlic on all sides.

Sauce: Place remaining ingredients in a food processor and puree. Place in a small saucepan and cook, uncovered, for 10 minutes to thicken; stir frequently. Reserve half the sauce for dipping.

Place wings on a baking sheet and brush with sauce. Bake at 350, basting occasionally with sauce, until chicken is done. Serve with reserved sauce
