CHICKEN CANNELONI ROLL-UPS

Sauce
3/4 cup thinly sliced celery
1/2 cup thinly sliced carrots and sliced mushrooms
1 small onion, sliced
1 clove garlic, minced
1 tbsp olive oil
1 (8 oz) can tomato sauce
1 (7 1/2 oz) can tomatoes, undrained and cut up
1 tsp Italian seasoning
3/4 tsp sugar

3 boneless, skinless chicken breasts, pounded to 1/4 inch thickness

Filling
1/2 cup ricotta cheese
3 tbsp grated parmesan cheese
1 tbsp chopped green onion
1/2 tsp Italian seasoning
Dash pepper

Shredded mozzarella cheese

Sauce: Saute vegetables in olive oil until tender. Add remaining ingredients and bring to a boil; reduce heat. Cook, uncovered, over low heat for 20 minutes.

Chicken: Combine filling ingredients and place about 1 1/2 tbsp cheese mixture onto each chicken piece. Roll up; place seam side down and place in a baking dish. Pour sauce over chicken rolls and bake, covered, at 375 for 25-30 minutes or until tender. Sprinkle with cheese and bake an addition 3-5 minutes or until cheese melts. Serves 6
