SPINACH CHEESE CASSEROLE

4 tbsp butter
1 lb sliced mushrooms and bulk Italian sausage
1/4 tsp ground fennel
1 (10 oz) pkg chopped frozen spinach, thawed and squeezed dry
1/4 lb ricotta cheese
1 (8 oz) pkg grated cheddar and Monterey jack cheeses
1/3 cup butter and vermouth
Sauté mushrooms in butter until moisture has evaporated, about 5 minutes. Sauté sausage until lightly browned and drain. Add mushrooms. Mix in fennel; set aside. Layer a greased casserole dish with 1/2 spinach, 1/2 meat mixture and top with 1/2 cheeses. Repeat, ending with cheese on top. Melt butter in vermouth over gentle heat and pour over casserole. Bake, uncovered, at 350 for 30 minutes.
